Red curry (Thai: แกงเผ็ด; rtgs: kaeng phet, IPA: [kɛːŋ pʰèt], lit: spicy soup) is a popular Thai dish consisting of red curry paste cooked in coconut milk and added with meat; such as chicken, beef, pork, duck or shrimp, or vegetarian protein source such as tofu.

Preparation:
- Water 1 2/3 cups ( 400 ml.)
- Beef, Chicken or Duck, sliced into pieces 250 g.
- Eggplant, sliced into 1/2 cup
- Sweet Basil 1/2 cup
- 3-4 Red Chilli
Directions:
1. Heat a pan to medium heat. Fry the contents of this packet with small amount of water.
2. Place the meat in the pan and stir-fry until oil of coconut is visible.
3. Add the rest of water and all other ingredients. Combine.
4. Cover until done. Serve.
(Add sugar to enhance swetness, if desired.)
